Coconut Prawn Noodles

Lots of you have been asking us for some high protein / low carb & fat savory dishes that are quick and easy to make. This one is an absolute winner. Jam-packed full of flavour, not to mention a whopping 44g of protein and at under 350 cals? Horaah.

Here's how...

Coconut Prawn Noodles


1 tsp extra virgin olive oil

200g of frozen King Prawns (cooked)

240 ml unsweetened coconut milk

75g Buckwheat Noodles

1 tsp 0% fat Greek Yoghurt

1 tsp fresh ginger, chopped

1 bird's eye chilli, finely chopped

20g red onion, sliced

50g kale, chopped

100ml vegetable stock

1 tsp dark soy sauce

1 garlic clove, finely chopped

Handful fresh Parsley

1. Heat oil in a frying pan or wok over a high heat.

2. Fry garlic, chilli, ginger, red onion, and kale for 2-3 mins

3. Meanwhile, cook buckwheat noodles in boiling water for 5-8 mins (please refer to packaging for instructions)

4. Add stock. Cook until vegetables are cooked but still crunchy

5. Add prawns, bok choi, noodles and coconut milk and soy sauce.

6. Bring to boil then remove from heat and serve with Greek yoghurt and fresh parsley

TIP:You can prep this the night before and re-heat in a microwave at work or eat cold.
